Submitted by Nancy Russman on 11/08/2000 There are several points to consider to help insure your selection is a good one:
  • Appoint a committee to do an assessment of need for your site selection.
  • A Kids Cafe site should be planned in a neighborhood that has high levels of children living in poverty
  • Ideal sites should be within walking distance for children of the neighborhood and should have proven community organization activities already in the works for children. Such activities might include: after school tutoring, mentoring, sports, arts and crafts, etc.
  • Sites must also have a CLEAN commercial grade kitchen. Ideal kitchens include:
  1. Commercial Stove
  2. At least one large freezer or walk-in freezer with a lock
  3. At least two refrigerators or walk-in refrigerator with locks
  4. Dry storage area at least 10' x 10' that can be locked
  5. Pots, pans, sheet pans, etc., to cook for 50-100 children
  6. Knives, cutting boards and other utensils needed for food preparation and cooking
  7. Thermometers for every freezers and refrigerators
  8. Thermometers to check food temperatures
  9. Three compartment sink
  10. Commercial dishwasher
  11. Flatware, plates, bowls and cups for the children to use (plan on many items to get tossed into the garbage).
